I've seen the recipes and techniques of Christine Ferber, the Queen of Jam from Tokyo to Bogota. They are a classic way to preserve fruit without commercial pectin to capture fruit at the height of its flavour. We will go through the hows and whys of this delicate technique, to make beautiful jars of strawberry jam.
We will meet at Mojo's Jojo's Nosh & Quaff (9627-82 Avenue) where Jojo will supply all of the things you need to take home a jar of cranberry sauce and a cup of prepared fruit for your to complete a jar at home.
This is a great introduction to high end canned jams using classic technique.

This class will give you the confidence to read and follow jam recipes on your own, setting you up for canning success in the future.
Canning Tools, provisions and recipe books will be available for purchase at the end of the class.
Washrooms and beverages will be provided
The kitchen is at grade level on Whyte Ave but shop doors may be narrow for a chair. Participants should be able to stand or sit at counter height for 2 hours.
Instruction will be in English and can be taught in French if requested.
